Grilling fish is easier than you think. It’s so quick to grill a wild red snapper fillet that you’d better have all your sides almost done before you start grilling your fish!
Wild red snapper fillets were on sale at the grocery store a few weeks ago, and I quickly snapped a couple up. Living in north Florida, we are fortunate to see seafood sales frequently. I didn’t realize until recently that the red snapper fishing rules recently passed, along with the dispersant impact of the Deepwater Gulf oil spill on fish, will probably mean red snapper being less widely available.
Regardless of the fish you decide to grill, seasoning it is key, just like with a cut of meat. With snapper, because the fish has a nice taste, and isn’t as bland as some fish, like tilapia, sprinkling a little kosher salt and ground pepper on it, and then brushing on a little extra virgin olive oil when it’s on the grill is the ticket to a tasty entree.
Fish fillets that can fall apart more easily than say, a cut of tuna, are more easily grilled when put in a grill basket for fish. The time needed to cook a red snapper fillet varies depending on the thickness of it, but expect the cooking time to be in the range of 10-11 minutes on a gas grill.
The delicate taste of the grilled red snapper will appeal to both kids and adults….a winning combination!

- Brush fillets with olive oil, then season with kosher salt and ground pepper, to taste.
- Place fillets carefully into fish basket and secure the handle.
- Grill the fillets (with grill cover down), turning once halfway through the 10-11 minute cooking time.

Fantastic job grilling the fish. It can be tricky and easy to over cook. Bravo on a job well done.
Love your site , very professional.
Thank you!
You're right…it can be tricky to grill fish, especially since grilling is much different than, say, sauteing or broiling. The fish basket made it much easier to turn the fish on the grill, although getting it out was an exercise in patience. One of the fillets did not come out of the basket perfectly. But the taste of the snapper was awesome.
Kelly,
I have never used the basket, but I know how delicate flipping the fish can
be. A good fish slice is imperative. I love the foodie dialouge, lets keep
in touch!
great recipe, grilled fish is super for the summer months, not so heavy yet full of flavor..

Great and easy recipe – and your fish is perfectly done! If I do grill fish, it's usually something sturdier like mackerel or tuna as white fish tends to fall apart. You did do a fantastic job here
Oh I just love grilled fish! This sounds (and looks) PERFECT!
Mmmm….I love grilled tuna…. I've got to make some soon, before summer is out.
Thanks Sommer! I've got to get your panna cotta recipe!
I love grill fish as it is so quick and easy to prepare. Very flavorful too! You new site looks wonderful!
