Menu Plan Monday: Roast Chicken Stars

My homemade latte is menu planning motivation!

Planning my meals worked wonderfully last week, so I’m back for seconds. :) Julie at Organizing Junkie hosts Menu Plan Monday weekly, which motivates lots of cooks like myself to take a few minutes to plan out the menu for the coming week.

Pork roast casserole treat of last week

Last week, the best recipe I made was pork roast casserole using leftover BBQ pork (I’ll share the recipe later in the week). This week, the star of the show is lemon and garlic roast chicken. While cleanup from roast chicken isn’t quick, the leftovers from a nearly 7 pound chicken are good for nearly two more meals–at least in our house!

Here’s to making delicious and easy meals during our work week!

Sunday: Easy Roast Chicken with mashed potatoes and zucchini.

Monday: Chicken a la King with homemade biscuits (I’m a rebel; I don’t put a biscuit topping on the casserole). I serve biscuits on the side so leftovers aren’t soggy. Genius, huh? :)

Tuesday: Orange Balsamic Glazed Chicken (recipe by Rachael Ray I’m trying out) with roasted butternut squash and asparagus.

Wednesday: Leftover buffet.

Thursday: Chicken Cacciatore

Friday: Baked Fish with creamy polenta and asparagus.

Saturday: Hubby’s in charge. Last week he made Parmesan Chicken Sticks (Ina Garten’s recipe) and served it with a side of pasta and marinara sauce.

I’m looking forward to trying out the The Best Banana Bread, Spelt Pretzels, and some Arroz con Pollo sometime soon! What’s on your menu this week?
