If I could have only one good knife in my kitchen, it would be a 7-inch Santoku knife. And if I couldn’t have that, I would make sure to keep my knife (or knives) sharp!
Truly, I don’t know how a busy cook does without a good knife, let alone a Santoku knife. Early on in my marriage, I had a dull chef’s knife (origins unknown) and I ended up with a shallow cut on my pointer finger. Not only did that boo boo take forever to heal, as one is constantly bending fingers; it hurt like the dickens until it finally closed up and healed.
Once that unfortunate incident happened, I tried sharpening my chef’s knife, to no avail. Eventually I bought a nice Santoku knife and couldn’t believe the difference in quality. It was actually easy to cut food!
It is funny that while I have a nice Santoku knife we still have a most ancient television. Can you tell where my priorities are?
I am sure everyone has a knife story to share. Who wants to go first?

YES! YES! YES! A sharp knife a MUST!!!
I used to have my favorite 7″ chef’s knife but was looking for a better one PPC came out w/a 5″ Santoku knife and I LOVE that thing! I have used my old 7″ chef’s knife maybe 5 times in the last year… Last week I gave away all my old knives that I never used… why do we collect so many knives?
My husband says that I have a thing for things that cut… I am very precise w/my scissors too… there is “whatever scissors” then I have my plastic scissors, then my paper scissors do not mess around w/them!!!! there is nothing more disappointing than going to someone’s house asking for a pair of scissors and the thing chews up the paper instead of cutting it!
I wholeheartedly agree! We are actually without our santoku knife right now. It’s a Henckels and developed a defect so we sent it back to get a replacement and it’s been over a month and I’m ready to weep! I tried to get a cheap replacement and it’s just not the same — I want my Henckels 7″ santoku back, pronto!

You are too funny, but what you say is so true for me, and probably for a lot of other cooks. Sounds like we both love our Santoku knives.
And as far as scissors go, I too have made it very clear to everyone not to use my kitchen scissors for paper or crafts!

First you have to deal with a defective Henckels Santoku, and then you have to cool your heels waiting for a replacement. Ay yai yai! I hope you get your replacement Santoku soon!
Oh no, to be without a Santoku knife would drive me crazy! Why is it taking so long to get a replacement Henckels Santoku sent to you? Oh, I would be complaining to the customer service manager right now if I were you.
